Yanase Yuka
Having spent her student years in the United States, Yuka joined an airline after graduation — and discovered a passion for fine food across the world. At thirty, she resolved to study cooking in earnest and moved to Italy, enrolling at the Scuola Internazionale di Cucina Italiana di Lucca in Tuscany, spending weekends training at wineries and cheese makers. Back in Japan, she earned her diploma at École Emi's in Aoyama, Tokyo, then spent a year at a renowned Italian restaurant in Hiroo. She studied Italian wine at the Académie du Vin Tokyo, holds the Junior Vegetable & Fruit Meister qualification, and in 2011 earned Grade 2 of the Culinary Proficiency Test certified by Tsuji Culinary Institute, Osaka.

Kenta moved with his family to New Zealand upon finishing junior high school. After high school he trained at Bay of Plenty Polytechnic, then at the Tsuji Culinary Institute in Osaka, where a deep fascination with Italian cuisine and culture took hold. He went on to study at ICIF — the Italian Culinary Institute for Foreigners — in Piedmont, before refining his craft at the two-Michelin-starred Ristorante Duomo in Sicily. Returning to Japan in 2007, he taught for three years at a culinary school in Aoyama, Tokyo. He appears regularly on NHK Nagoya's "Sara Sara Salad."

In Italian, "il fior fiore" means "the flower in bloom" —
and, by extension, "the very best place, where people gather."
We chose this name with a wish: that our salon would be more than a place to learn cooking —
a space of genuine comfort and warmth.
Come as you would to a friend's home for good food and wine.
Through conversation and cuisine, may your table bloom like a flower.
